Blueberry Toast is a great breakfast option! I love it in the mornings to start my day. It can also be a great snack or even a lunch item if you want. It takes less than 10 minutes to make, is so tasty and you most likely have all the ingredients in your house. It is a sweet way to start the day, no pun intended. But you’re using honey not sugar so it’s better for you!
This blueberry toast is easily customized with some different suggestions I’ll list later, making it a great recipe to add to the breakfast menu every week!

To make this recipe you need:
Fresh blueberries (you can use frozen if you absolutely have to, but I definitely recommend using fresh for this! Keep in mind if you do use frozen, you’ll need to boil them a bit longer to get rid of the excess liquid!)
Cream cheese (see below if you want other suggestions!)
Lemon juice (use fresh if you want and then top the toasts with lemon zest for an added touch!)
Honey

What kind of bread should I use?
You can actually use any kind of bread you like! Whole wheat bread, white bread, French bread, sourdough bread, whatever your favourite is!
Do I have to use cream cheese?
I’m so glad you asked! There are a few other options if you don’t have or don’t want to use cream cheese.
Ricotta cheese
Greek yogurt (thick enough so your bread won’t go soggy)
Goat cheese (if you want a little more savory taste)
OR if you are dairy free, try almond butter or peanut butter!
Now let’s get on to making this delicious blueberry toast!
How to make Blueberry Toast:
Step 1: Put your blueberries, honey and lemon juice in a saucepan.
Step 2: Boil on medium heat for 5-7 minutes. Some of the berries will burst but you want some of them whole too. It will thicken slightly!
Step 3: Toast your bread and spread a layer of cream cheese on the slices.
Step 4: Top the toast slices evenly with the blueberries and drizzle with honey. Add lemon zest on top if you wish!
A way to make this recipe even easier:
Running low on time? Skip the boiling of the blueberries and simply place whole fresh blueberries on your toast! BUT if you have the time I highly recommend boiling the berries. This blueberry toast really is to die for and you’ll want to make it again!
Blueberry Toast
Ingredients
- 1 1/2 cups fresh blueberries
- 3 tablespoons honey plus extra for drizzle
- 1 teaspoon lemon juice
- 1/2 cup cream cheese
- 4 slices bread
- lemon zest for garnish, optional
Instructions
- Put your blueberries, honey and lemon juice in a saucepan.
- Boil on medium heat for 3-5 minutes till some of the berries burst and it thickens slightly. Some of the berries will still be whole and that's okay!
- Let it cool for about 5 minutes, it will thicken slightly also.
- Toast your bread and spread a layer of cream cheese on the slices.
- Top the slices evenly with the blueberries and drizzle with honey. Add lemon zest on top if you wish!
