Chocolate Shortbread Cookie Recipe is such a treat! Who doesn’t love cookies? And shortbread cookies. So soft they melt in your mouth, a delicate taste with so many options. They are good for just stuffing into your face, one after the other. Or on the complete opposite hand, a good item for a fancy dessert party. With Christmas coming up, they are a great idea for a cookie exchange, family get together or just a snack while decorating the tree.
These are made with 4 ingredients plus chocolate so they are super simple to make. All you need is:
Soft butter or margarine
Flour
Cornstarch
Icing sugar
And of course chocolate!
Then you mix all the dry ingredients. Blend in the butter and chocolate. Roll into balls and place on ungreased cookie sheets. Bake for 18-20 minutes. Cool and enjoy!
Do I have to sift the dry ingredients or can I skip that step?
You don’t have to sift the dry ingredients, it just makes sure there are no lumps and ensures for a smoother cookie, which is what you want for shortbread!
Can I double the recipe for Chocolate Shortbread Cookie Recipe?
Yes, this recipe is super easy to double or even triple! When doubling, start with 2 squares of grated chocolate and see if you need to add more. I found when I doubled the recipe I just stuck with the same amount of chocolate as if I was making a normal batch. But you can definitely add more if you wish!
How long do I bake my cookies for?
18-20 minutes is a good time. You will start to see them browning slightly when they are done, and they should hold together if you try to lightly pick them up. But, remember to let them cool before removing them from the pan or they could crumble and fall apart!

Chocolate Shortbread Cookie Recipe
Ingredients
- 1 cup flour
- 1/2 cup cornstarch
- 1/2 cup icing sugar
- 3/4 cup butter, soft
- 2 squares chocolate, grated
- chocolate chunks or cashews, optional
Instructions
- Sift and mix together flour, icing sugar and cornstarch.
- Blend in butter and grated chocolate until smooth.
- Shape into 1″ balls and place on ungreased baking sheets. Flatten slightly with a fork.
- OR You can roll dough into 1/4″ thickness and use cutters to make shapes.
- Place a chocolate chunk or cashew into each cookie if you wish.
- Bake at 300 degrees F for 18-20 minutes. Cool completely and serve.
