How to Make Easy Blueberry Pancakes Recipe
These beauties are so easy to make!
Simply sift all the dry ingredients together.
Beat egg lightly in a separate bowl.
Add milk, oil and beaten egg to dry ingredients and gently whisk together.
Add blueberries and barely mix these in. (You don’t want to over stir!)
Heat your grill and oil it and once it’s hot enough, scoop a small amount of batter onto the grill for as many pancakes as you want. See below for more tips!
Tips for Easy Blueberry Pancakes Recipe
Stirring: Don’t over stir! You want there to be air inside the pancakes to make them fluffy, so its’s okay if the batter is a bit lumpy. This is normal and what you want to see.
Flipping the pancakes: A good way to tell if it’s time to flip your pancakes over, is when little bubbles form on the top. Once the bubbles pop, go ahead and flip them. Then just cook them for a minute or 2 on the other side. Avoid flipping your pancakes more than once!
Heating the pan: Make sure your pan/grill is hot enough before pouring the batter on it! But make sure it’s not too hot that your pancakes will burn and cook unevenly. Set it to medium and make a test pancake if you are unsure as all grills and stoves and pans are different. (I have burned pancakes using some stoves!)
Can I make a double batch of Easy Blueberry Pancakes Recipe?
Yes, you can! I have made up to a 4x batch of these.
What if I don’t have buttermilk, can I just use regular milk?
I would highly recommend using buttermilk if you can, but if you simply can’t get buttermilk, here’s a trick.
Just add 1 tablespoon of lemon juice or vinegar to 1 cup of regular milk. 2 tablespoons to 2 cups and so on. Stir together and let it it for a few minutes and you have “homemade buttermilk”!
Can I leave out the blueberries?
Are you not a fan of blueberries? By all means, leave them out. You can add chocolate chips instead or just leave them plain. Or experiment!
I don’t have a grill, what should I use?
I have found a grill is the easiest way to make these, but a non stick skillet or cast iron frying pan works really well too. Just make sure to add butter or oil when cooking.

Ingredients
- 1 egg
- 1 cup buttermilk
- 2 tablespoons olive oil
- 1/2-3/4 cup blueberries
- 1 cup flour
- 1 tablespoon sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
Instructions
- Sift last 5 ingredients into a large bowl.
- Add eggs, oil and milk. Whisk gently.
- Add in blueberries and stir lightly.
- Use an oiled grill to cook pancakes.
