Looking for a great way to start the day? This 45 minute breakfast poutine has you covered, with lots of protein as well as flavor to kickstart your morning. With homemade hollandaise sauce, you’ll think you’re at a diner sitting down to a breakfast that a waitress just brought you! You ready? Let’s go!
What You Will Need to Make Breakfast Poutine:
Ingredients:
- Bacon
- Ham
- White onion, optional as I know some people don’t like it!
- Mushrooms
- Peppers (I used orange to add a different color!)
- Green onions
- Eggs
- Tomatoes, cherry or grape work nicely
- Potatoes
- Spices (I use salt, cayenne pepper, dried parsley, pepper)
- Cheese curds (I cheated and used marble cheese but I was isolating and couldn’t leave my house in my defense haha! But highly recommend cheese curds!!)
- Lemon juice
- Olive oil
- Butter

- Air fryer
- Blender
Do I need an air fryer to make homemade fries?
No, you can use the oven but it takes a lot longer. So if you have an air fryer, highly recommend using it!
How do I make Hollandaise Sauce?
Making hollandaise sauce is actually super easy and I like to use a blender. You can make hollandaise sauce on the stove but once again, like the air fryer, the blender is easier!
1. Simply add egg yolks, salt, cayenne pepper and lemon juice to the blender.
2. Melt butter until hot, not warm, but hot.
3. Blend egg mixture for about 10-15 seconds.
4. Keep blending while slowly pouring butter in.
5. Blend until thick and butter is all mixed in.
6. Serve while warm!
Do I need hollandaise sauce?
Well, technically no, but if you want a delicious tasting breakfast poutine, you shouldn’t skip out on this!! It’s so easy to make if you follow the recipe above. You can also use gravy and it would taste good as well, but I recommend trying the hollandaise sauce, you won’t regret it!
Steps to Follow:
Homemade Fries for Poutine:
- First thing to do is wash and slice the potatoes. You want them in thin long slices, the size of fries you would get at the store or restaurant.
- Dry them slightly with a paper towel and then mix in a bowl with spices and olive oil.
- Pour them into your air fryer and set timer for 10 minutes.
- Work on the rest of your prep and when the timer goes, shake the basket so the fries get moved around. Set the timer for 10 more minutes.
- Fries should be done after 20 minutes but adjust to your liking.
Prep for the Breakfast Poutine
- Next thing is to slice and chop all your veggies. Chop bacon and ham into small pieces. Slice mushrooms, chop peppers and thinly slice onions.
- You can fry the meat and veggies seperately. (Or do all together if you want. Cook bacon first, add in peppers and onions, then ham and mushrooms last.)
- Chop green onions and tomatoes for garnish.
- Make hollandaise sauce.
- Lastly cook your eggs. I like mine sunnyside up or over easy so there is yolk but however you like your eggs will work!
Assemble Your Breakfast Poutine:
- Divide homemade fries evenly among bowls.
- Layer meat and fried onions, mushrooms and peppers on top.
- Pour a bit of hollandaise sauce on top.
- Place cheese and egg on top.
- Pour more hollandaise sauce over top and garnish with tomatoes and green onions.

Equipment

- 8 slices Bacon chopped
- 5 oz cooked ham chopped
- 1/2 bell pepper chopped
- 4 oz mushrooms thinly sliced
- 1/2 white onion thinly sliced
- 1/2 cup cherry or grape tomatoes quartered
- 2 green onions sliced
- 4 eggs
- 1 cup cheese curds
Fries
- 4 large potatoes chopped thin and long
- salt to taste
- pepper to taste
- 1 tablespoon dried parsley
- 2 tablespoons dried chives
- 1-2 teaspoons cayenne pepper
Hollandaise Sauce
- 3 egg yolks
- 1/2 cup butter melted till very hot
- 1 tablespoon lemon juice
- 1/4 teaspoon cayenne pepper
- pinch of salt
Instructions

- Quarter tomatoes and slice green onions for garnish.
- Fry meat and veggies separately. Or if you're using one pan, fry the bacon first, then add onions and peppers, and lastly mushrooms and ham.
Hollandaise Sauce
- Add egg yolks, salt, cayenne pepper and lemon juice to the blender.
- Melt butter until hot.
- Blend egg mixture for about 10-15 seconds.
- Keep blending while slowly pouring butter in.
