What is a Whoopie Pie?

A whoopie pie is actually the official state treat of Maine! It consists of two cookies which are more cake-like than cookies with white frosting in the middle, generally marshmallow.
How to Make Whoopie Pies: Ingredients you will need
- butter
- white sugar
- eggs
- vanilla
- buttermilk
- flour
- cocoa
- baking powder
- salt
- soda
And for the Cream Cheese Filling:
- cream cheese
- butter
- powdered sugar
- vanilla
How to Make Whoopie Pies: Filling Options
Really, you have so many options with this sweet treat. The filling can be a custard or creme or even a sweet fruity center. Just make these chocolatey babies and let your imagination run wild!
I am not a huge fan of the actual marshmallow filling that is typical for whoopie pies so I love this cream cheese filling.

How many cookies does this recipe make?
One recipe makes about 12 dozen sandwiches, so about 24 individual cookies. But go ahead and double it if you need more!
How to Make Whoopie Pies if you don’t have buttermilk:
If you don’t have buttermilk don’t panic! You can still make this recipe. Just use regular milk. OR if you want to you can make your own buttermilk by simply adding 1 tablespoon of vinegar or lemon juice per 1 cup milk.
How long do I bake Whoopie Pies for?
8-10 minutes is a good time frame. You don’t want the bottoms to burn so be careful which racks you place the cookie sheets on. I found 10 minutes was the perfect time in my oven!

How to Make Whoopie Pies
Ingredients
Cookies:
- 1 cup butter
- 1 cup white sugar
- 2 eggs
- 2 teaspoons vanilla
- 1 cup buttermilk
- 2 cups flour
- 1/2 cup cocoa
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon soda
Cream Cheese Filling
- 8 oz cream cheese
- 1/2 cup butter
- 2 cups powdered sugar
- 2 teaspoons vanilla
Instructions
- Combine butter, sugar, egg yolks and vanilla.
- Mix cocoa, salt, baking powder, soda and flour together.
- Alternate adding the dry ingredients and buttermilk to the sugar mixture.
- Drop by rounded tablespoon onto a greased cookie sheet or a sheet lined with parchment paper.
- Cool.
Cream Cheese Filling
- Beat cream cheese and butter until smooth.
- Add vanilla and powdered sugar and beat until well combined.
- Take one cookie and spread 1-2 tablespoons of the filling on the flat part of the cookie.
- Top with another cookie, pressing the flat part into the cream cheese icing so you are left with a sandwich.
- Repeat with the remaining cookies.
