Breakfast Poutine

Breakfast poutine is a great way to start the day. Homemade fries, loaded with veggies and meat, topped with an egg and hollandaise sauce, what's not to love?

Equipment

  • air fryer optional

Ingredients

  • 8 slices Bacon chopped
  • 5 oz cooked ham chopped
  • 1/2 bell pepper chopped
  • 4 oz mushrooms thinly sliced
  • 1/2 white onion thinly sliced
  • 1/2 cup cherry or grape tomatoes quartered
  • 2 green onions sliced
  • 4 eggs
  • 1 cup cheese curds

Fries

  • 4 large potatoes chopped thin and long
  • salt to taste
  • pepper to taste
  • 1 tablespoon dried parsley
  • 2 tablespoons dried chives
  • 1-2 teaspoons cayenne pepper

Hollandaise Sauce

  • 3 egg yolks
  • 1/2 cup butter melted till very hot
  • 1 tablespoon lemon juice
  • 1/4 teaspoon cayenne pepper
  • pinch of salt

Instructions

Homemade Fries

  • Wash and slice the potatoes. You want them in thin long slices, the size of fries you would get at the store or restaurant.
  • Dry them slightly with paper towel and then mix in a bowl with spices and olive oil.
  • Pour them into your air fryer and bake for 20 minutes, shaking the basket halfway through to evenly cook the fries.

Toppings

  • Chop bacon and ham.
  • Slice mushrooms, chop peppers and thinly slice onions.
  • Quarter tomatoes and slice green onions for garnish.
  • Fry meat and veggies separately. Or if you're using one pan, fry the bacon first, then add onions and peppers, and lastly mushrooms and ham.

Hollandaise Sauce

  • Add egg yolks, salt, cayenne pepper and lemon juice to the blender.
  • Melt butter until hot.
  • Blend egg mixture for about 10-15 seconds.
  • Keep blending while slowly pouring butter in.
  • Blend until thick and butter is all mixed in. Serve warm!

Assembly

  • Cook eggs to your liking. I like to use over easy so there's yolk!
  • Divide homemade fries evenly among bowls.
  • Layer meat and fried onions, mushrooms and peppers on top.
  • Pour a bit of hollandaise sauce on top.
  • Place cheese and egg on top.
  • Pour hollandaise sauce over top and garnish with tomatoes and green onions.
