Peanut Butter Bread with Buttermilk

This super easy quick bread has a pleasant tang from the buttermilk, a lovely peanut butter taste, and a great addition to breakfast or snack!

Ingredients

  • 3/4 cup brown sugar
  • 1/3 cup peanut butter
  • 1 egg
  • 1 3/4 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • Jam, optional

Instructions

  • Preheat oven to 350° and grease a 8" by 4" loaf pan or line with parchment paper.
  • Sift together the flour, salt and baking soda. Sift three times.
  • In a mixing bowl, blend together sugar and peanut butter. I used an electric mixer.
  • Beat in the egg. Blend the dry ingredients with the peanut butter mixture.
  • Slowly add buttermilk, beating until smooth. If using an electric mixer, make sure to scrape the sides of the bowl so everything gets mixed together.
  • Pour into prepared pan and bake for 50-60 minutes or until toothpick inserted in center comes out clean.
  • Transfer bread to cooling rack to cool. Serve plain or with butter and jam.
