Ingredients

  • 2 cups flour
  • 3 tablespoons granulated sugar
  • 3 tablespoons poppy seeds
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 2 large lemons
  • 1 stick cold unsalted butter
  • 1/2 c. heavy cream
  • 1/4 cup lemon juice

Instructions

  • Preheat oven to 400 degrees F. In a large bowl, combine flour, granulated sugar, poppy seeds, lemon zest, baking powder, baking soda, and salt. Using a pastry cutter or two knives, cut in butter until mixture resembles cornmeal.
  • Pour in heavy cream, then add 1/4 cup lemon juice. Don't over stir, just mix until dough is formed.
  • Gather dough together with your hands and gently press into a ball. Transfer dough to a parchment-lined baking sheet and shape into an 8-inch disk. Cut into 8 wedges and separate so scones are about 1 inch apart.
  • Bake about 13-15 minutes. Scones will be golden and a toothpick inserted in the center will come out clean. Cool on a wire rack for about twenty minutes before serving.
