Italian Peasant Soup Recipe

A delicious soup filled with beans, meat, spinach and tomatoes. Lots of flavour, family friendly, quick and easy!

Ingredients

  • 1 pound sausage links sliced
  • 1 large onion chopped
  • 3 garlic cloves minced
  • 1 pound boneless skinless chicken breasts cubed
  • 2 15 oz cans of kidney beans
  • 2 14.5 oz cans chicken broth
  • 2 14.5 oz cans diced tomatoes
  • 2 teaspoon dried basil
  • 2 teaspoon dried oregano
  • 5 cups fresh spinach leaves chopped
  • Shredded Parmesan cheese optional
  • salt and pepper

Instructions

  • In a pan on medium heat, cook sausage and onions. Add garlic and cook for 30 more seconds. Drain and set aside. In the same pan, cook chicken until no longer pink.
  • In a large pot on medium heat, add sausage and onions and chicken.
  • Stir in the beans, broth, tomatoes, basil and oregano. Bring to a boil.
  • Lower heat and simmer for 10 more minutes. Add the spinach and heat just until wilted.
  • Season with salt and pepper and garnish with cheese if desired.
