Creamed Ham and Eggs

  • 3 tablespoons butter or margarine
  • 3 tablespoons flour
  • 1/2 teaspoon dry mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 1/4 cups milk
  • 1 cup cooked ham
  • 4 hard boiled eggs, peeled and cut into fourths


  • Melt butter on low heat in a sauce pan. Stir in flour, salt, pepper and mustard.
  • Cook, stirring constantly until mixture is smooth.
  • Remove from heat and stir in milk.
  • Stir in milk, stirring constantly until mixture boils.
  • Turn down heat and gently stir in eggs and ham.
  • Serve warm over biscuits or toast.
