Banana Oatmeal Bread Recipe

Moist and yummy, my favorite recipe for banana bread!

Ingredients

  • 1/2 cup shortening
  • 1 cup sugar
  • 2 eggs
  • 1/2 teaspoon vanilla
  • 1 cup flour
  • 1 cup quick oatmeal
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1 teaspoon baking soda
  • 1 1/2 cups mashed bananas 3 medium
  • 1/4 cup milk
  • 1/2 cup chopped nuts

Instructions

  • Preheat oven to 350°F and grease a 9" by 5" loaf pan. 
  • Stir together flour, oats, salt, baking soda and cinnamon. 
  • Cream together shortening and sugar.
  • Add eggs and vanilla and beat until fluffy.
  • Add 1/2 cup flour mixture to creamed mixture then 1/2 cup bananas. Repeat once more. Add 1/2 cup more flour, the last of the banana, then the last of the flour. 
  • Add in the milk and mix on low until blended. Fold in nuts.
  • Pour into greased pan and bake for 60 minutes or until cake tester inserted in the center comes out clean. 
  • Cool on wire rack.
