Preheat oven to 350°F and grease a 9" by 5" loaf pan.
Stir together flour, oats, salt, baking soda and cinnamon.
Cream together shortening and sugar.
Add eggs and vanilla and beat until fluffy.
Add 1/2 cup flour mixture to creamed mixture then 1/2 cup bananas. Repeat once more. Add 1/2 cup more flour, the last of the banana, then the last of the flour.
Add in the milk and mix on low until blended. Fold in nuts.
Pour into greased pan and bake for 60 minutes or until cake tester inserted in the center comes out clean.
