Chocolate Shortbread Cookie Recipe

Melt in your mouth shortbread cookies - with chocolate!

Ingredients

  • 1 cup flour
  • 1/2 cup cornstarch
  • 1/2 cup icing sugar
  • 3/4 cup butter, soft
  • 2 squares chocolate, grated
  • chocolate chunks or cashews, optional

Instructions

  • Sift and mix together flour, icing sugar and cornstarch. 
  • Blend in butter and grated chocolate until smooth. 
  • Shape into 1" balls and place on ungreased baking sheets. Flatten slightly with a fork.
  • OR You can roll dough into 1/4" thickness and use cutters to make shapes. 
  • Place a chocolate chunk or cashew into each cookie if you wish. 
  • Bake at 300 degrees F for 18-20 minutes. Cool completely and serve.
