Gluten-Free Banana Bread Recipe

Ingredients

  • coconut oil or butter for greasing pan
  • 2 eggs
  • 3 ripe bananas mashed
  • 2 teasoons baking powder
  • 1/4 teaspoon baking soda
  • 1 1/4 cup almond meal
  • 1/2 teaspoon cinnamon
  • 1/2 cup strawberries chopped
  • 1/2 cup pecans chopped

Instructions

  • Preheat oven to 350 degrees F. Grease a loaf pan (or 8' by 8' cake pan) with coconut oil or butter.
  • Combine baking powder, baking soda, cinnamon and almond meal together.
  • Add eggs, bananas, and strawberries and mix well.
  • Add pecans and mix lightly.
  • Pour into pan and bake for 45 minutes or until toothpick comes out clean.
  • Let sit for 10-12 minutes and transfer to a wire rack to cool.
