- coconut oil or butter for greasing pan
- 2 eggs
- 3 ripe bananas mashed
- 2 teasoons baking powder
- 1/4 teaspoon baking soda
- 1 1/4 cup almond meal
- 1/2 teaspoon cinnamon
- 1/2 cup strawberries chopped
- 1/2 cup pecans chopped
Preheat oven to 350 degrees F. Grease a loaf pan (or 8' by 8' cake pan) with coconut oil or butter.
Combine baking powder, baking soda, cinnamon and almond meal together.
Add eggs, bananas, and strawberries and mix well.
Add pecans and mix lightly.
Pour into pan and bake for 45 minutes or until toothpick comes out clean.
Let sit for 10-12 minutes and transfer to a wire rack to cool.
