Peanut Butter Bread with Buttermilk
This super easy quick bread has a pleasant tang from the buttermilk, a lovely peanut butter taste, and a great addition to breakfast or snack!

- 3/4 cup brown sugar
- 1/3 cup peanut butter
- 1 egg
- 1 3/4 cups flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup buttermilk
- Jam, optional
Preheat oven to 350° and grease a 8" by 4" loaf pan or line with parchment paper.
Sift together the flour, salt and baking soda. Sift three times.
In a mixing bowl, blend together sugar and peanut butter. I used an electric mixer.
Beat in the egg. Blend the dry ingredients with the peanut butter mixture.
Slowly add buttermilk, beating until smooth. If using an electric mixer, make sure to scrape the sides of the bowl so everything gets mixed together.
Pour into prepared pan and bake for 50-60 minutes or until toothpick inserted in center comes out clean.
Transfer bread to cooling rack to cool. Serve plain or with butter and jam.
