Ingredients

  • 4 eggs
  • 1 cup shredded cheddar cheese
  • 3-4 potatoes
  • olive oil
  • 2 green onion, sliced
  • salt
  • pepper

Instructions

  • Peel potatoes and chop into cubes. Fry in a skillet with olive oil until nicely browned. 
  • Make 4 wells in the fried potatoes and put an egg in each one. Sprinkle salt and pepper over everything. 
  • Cover skillet with a lid and cook eggs for about 5 minutes. In last minute of cooking time, add cheese and green onions and more salt and pepper if needed.
