Chocolate Shortbread Cookie Recipe
Melt in your mouth shortbread cookies - with chocolate!

- 1 cup flour
- 1/2 cup cornstarch
- 1/2 cup icing sugar
- 3/4 cup butter, soft
- 2 squares chocolate, grated
- chocolate chunks or cashews, optional
Sift and mix together flour, icing sugar and cornstarch.
Blend in butter and grated chocolate until smooth.
Shape into 1" balls and place on ungreased baking sheets. Flatten slightly with a fork.
OR You can roll dough into 1/4" thickness and use cutters to make shapes.
Place a chocolate chunk or cashew into each cookie if you wish.
Bake at 300 degrees F for 18-20 minutes. Cool completely and serve.
