Lemon Curd Cookies are the perfect mix of sweet and tangy!

The cookie is a shortbread cookie that melts in your mouth and you can fill these cookies with homemade or store bought curd!

You will need: – cornstarch – powdered sugar –  flour – butter - salt - vanilla - lemon curd (bought or homemade)

Step 1:  Sift together flour, cornstarch, powdered sugar and salt. 

Step 2: Add butter and vanilla.

Step 3: Mix in butter and vanilla, kneading slightly to incorporate evenly.

Step 4: If dough seems soft, chill for about 20 minutes.

Step 5:  Roll dough into 1 inch balls.

Step 6:  Use your fingers or a measuring spoon to create an indent in the cookies.

Step 7:  Fill each indent with lemon curd (make sure not to over fill!)

Step 8: Place cookies in a 300 degrees preheated oven. Bake for 15 minutes or until golden brown.
