You can freeze this bread! The best way to do it, is slice it up and place the slices in freezer safe bags. It will freeze well for about 2 months.

Gluten-Free Banana Bread Recipe
Ingredients
- coconut oil or butter for greasing pan
- 2 eggs
- 3 ripe bananas mashed
- 2 teasoons baking powder
- 1/4 teaspoon baking soda
- 1 1/4 cup almond meal
- 1/2 teaspoon cinnamon
- 1/2 cup strawberries chopped
- 1/2 cup pecans chopped
Instructions
- Preheat oven to 350 degrees F. Grease a loaf pan (or 8′ by 8′ cake pan) with coconut oil or butter.
- Combine baking powder, baking soda, cinnamon and almond meal together.
- Add eggs, bananas, and strawberries and mix well.
- Add pecans and mix lightly.
- Pour into pan and bake for 45 minutes or until toothpick comes out clean.
- Let sit for 10-12 minutes and transfer to a wire rack to cool.
