Banana Oatmeal Bread Recipe is by far my favorite banana bread recipe. It is not as easy as some of your basic banana breads but it only takes a few minutes longer and is well worth it. I have made it with walnuts, chocolate chips, or even plain and every time it has been a hit!

I have made this so many times, for my family and for friends. And every time, I always get ooohs and ahhhs. One of my friends saw the loaf on the counter when she came over for a visit and exclaimed “Is this your banana bread?!” And I was like yes, yes it is.

Greasing or lining the pan.
I like to use parchment paper instead of greasing, because I find it holds it together better. It also makes it easier for getting the bread out of the pan after baking. However, greasing works just as well so it’s entirely up to you! Just make sure to grease it very well.
Making sure you have ripe bananas on hand.
The easiest way for me to always ensure I have ripe bananas when making banana bread (because ripe bananas make the best banana bread!), is to freeze them. Yes, that’s right. Anytime, you have bananas that are turning brown and unfit to eat any more, put them in a freezer safe bag and in your freezer. Then, when you’re ready to make banana oatmeal bread, pull them out of the freezer. And voila! You have ripe bananas!
Can you freeze Banana Oatmeal Bread Recipe?
The great thing about this recipe is, it freezes really well! Since you can double this recipe, I always make two loaves: one to freeze and one to eat. Because if I make only one, it’s all gone within a day or 2. So it’s nice to have a secret stash.
Can I add chocolate chips?
Ummm, yes! Chocolate is always a yes. You can either omit the nuts completely and just add 1/2 cup chocolate chips. OR you can add half nuts, half chocolate chips. And for the nuts, the options aren’t limited. You can use peanuts, walnuts, pecans. OR you can just leave it completely plain. My personal favorite is walnuts but feel free to experiment and let me know what you discover!

Banana Oatmeal Bread Recipe
Ingredients
- 1/2 cup shortening
- 1 cup sugar
- 2 eggs
- 1/2 teaspoon vanilla
- 1 cup flour
- 1 cup quick oatmeal
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1 teaspoon baking soda
- 1 1/2 cups mashed bananas 3 medium
- 1/4 cup milk
- 1/2 cup chopped nuts
Instructions
- Preheat oven to 350°F and grease a 9″ by 5″ loaf pan.
- Stir together flour, oats, salt, baking soda and cinnamon.
- Cream together shortening and sugar.
- Add eggs and vanilla and beat until fluffy.
- Add 1/2 cup flour mixture to creamed mixture then 1/2 cup bananas. Repeat once more. Add 1/2 cup more flour, the last of the banana, then the last of the flour.
- Add in the milk and mix on low until blended. Fold in nuts.
- Pour into greased pan and bake for 60 minutes or until cake tester inserted in the center comes out clean.
- Cool on wire rack.
