All you need is a few ingredients!

And of course eggs.
Can I add bacon?
Umm, yes! Never say no to bacon. However, you can also add ham or ground sausage. I didn’t have any bacon at the time I made this and I highly regretted it. But, you can never go wrong with bacon.
What are some other options for toppings?
Swiss cheese and ham would be a good mix. In addition, peppers, mushrooms, red onion and ground sausage are all delicious options. You can even use tater tots instead of potatoes if you wish. And, let me know what combination is your favorite and what things you have tried!
Tips for Easy Breakfast Skillet Recipe:
Preparing the potatoes
You can either peel the potatoes or leave the skin on, it’s all up to you. Next, you cube them and fry them. As they are frying, you can season them with salt and pepper and whatever other spices you like. Paprika, garlic, onion, or cayenne pepper are a few that go well. I find if I have leftover baked potatoes, this recipe is a great way to use them up. This way they are already cooked and are ready faster! Just cube them and fry till browned.
Cooking the eggs
5 minutes is an estimated time for cooking the eggs. Obviously, it depends how you eat your eggs. I like mine with the yolks runny so 5-6 minutes works for me, but just adjust the time to cook the eggs to your liking.

Easy Breakfast Skillet Recipe
Ingredients
- 4 eggs
- 1 cup shredded cheddar cheese
- 3-4 potatoes
- olive oil
- 2 green onion, sliced
- salt
- pepper
Instructions
- Peel potatoes and chop into cubes. Fry in a skillet with olive oil until nicely browned.
- Make 4 wells in the fried potatoes and put an egg in each one. Sprinkle salt and pepper over everything.
- Cover skillet with a lid and cook eggs for about 5 minutes. In last minute of cooking time, add cheese and green onions and more salt and pepper if needed.
